Multiple dishes in one cooker
This was fun. Polenta in one jar and pinto beans in the other.
Polenta: 3c cold water, 1c cornmeal, 1/4 tsp salt. Stir it all together. Done in about 60 -90 minutes. Perfect, no lumps.
However, use a straight sided container instead of a jar, as I did. The polenta will be thick and it was difficult to get the cooked product out of the jar.
Pinto beans. 2c dry beans, 5c water, 1 Tbs olive oil, 1/2 c chopped onion, 1 black garlic, sliced. Beans take a long time and as the days are getting shorter, the extended cooking ability of the ASSC Camper come into play. I did not start early, but I did finish late. At 2 p.m. the beans were hot but not soft, so I cooked until sunset, about 5 p.m. The beans were perfect, soft, delicious.
The meal: Polenta covered with beans, shredded cheese. Garnish with Serrano peppers.
