Thai Red Curry Noodle Soup

Ingredients
1 Tbsp Vegetable Oil
¼ Medium Onion, Thinly Sliced
½ Red Bell Pepper, Thinly Sliced
1 Carrot, Finely Chopped
2 Cloves Minced Garlic
2 Tbsp Red Curry Paste
3 Cups Chicken Broth
1 ½ Cups Full Fat Coconut Milk
2 Tbsp Fish Sauce
1 Tbsp Grated Ginger
5 Oz Ramen Noodles
½ of a Lime, Halved, One Half Sliced Into Wedges
Chopped Cilantro for Garnish
In preheated solar oven, add oil, garlic, ginger, and red curry paste. Stir to combine and leave to cook for about 20 minutes.
Add in onions, bell pepper, carrot, fish sauce, and juice of a quarter of the lime. Combine and let simmer for 30 minutes.
Add chicken broth, coconut milk, noodles, and stir. Let simmer for an hour.
Garnish with chopped cilantro and serve!
Note: The cooking time may vary depending on the strength of your solar cooker. Adjust accordingly.
